Looking for ideas to use up the Costco rotisserie chicken in your refrigerator? Check out my fast and easy Chicken Taco Recipe (Low Carb) below!
Below are the tools you’ll need:
Below are the ingredients (I try to buy organic when possible) I use for my tacos, but feel free to use whatever you prefer or have laying around in your refrigerator:
Cut chicken into small square cubes and put aside. Chop up onions and pull leaves or chop up leaves and stem of cilantro. If you have and like avocado, lime, parmesan cheese…you can put these on your tacos too.
Pour a little olive oil on the pan, turn heat to medium and cook chicken until brown and slightly crispy. I add a lot of sea salt because typically the chicken is bland, but be sure to add sea salt to meet your own taste and/or health restrictions. Put cooked chicken in bowl and set aside.
Pour a small amount of olive oil and cook tortillas until slightly brown on both sides.
Then add chicken and shredded mozzarella cheese, this is how my kids eat these tacos. My wife adds salsa. I go further and add red onions and cilantro. Sometimes I’ll add avocado. Everyone likes to put parmesan cheese on the taco shell when we have it available. And, you can squeeze some lime top if you have it available too.
