My mom use to make this chuck wagon recipe for me and my brothers when I was a kid, now I’m making it for my kids and sharing with you. It’s kid friendly (most kids like it, can’t please everyone though) and it’s easy to make. It makes enough to feed our family of five and have left overs. We eat chuck wagon with some kind of veggie and garlic french bread.
*Note, this amount of cheese is to mix into sauce. We also add additional layers of cheese when putting the casserole together, so you may need more cheese if you like to add layers of cheese to the casserole.
Cook macaroni until tender in boiling salted water. Drain, rinse, and drain again.
Cook ground beef and onion on medium heat until beef is slightly brown. Add seasonings and tomato sauce, then simmer 5 minutes. Then, add cheese and stir until melted. You’ll want to make sure the beef is thoroughly cooked.
Oil pan. Layer 1/2 macaroni, 1/3 meat and corn. We like cheese, so we place a layer of cheese, but not required by the recipe.
Over this layer, remaining macaroni and meat. Another layer of cheese if you desire.
If you’re going to eat right away, you can put foil over for a few minutes to melt the cheese or put in oven for a few mintues.
Planning to eat the next day, put in the refrigerator. Then, you can warm up casserole by baking at 350 degrees for 30 minutes or until thoroughly
heated.
